Distiller’s Training and Grappa
Tasting Seminar” from October 15th to 17th, 2004 at the Capovilla distillery
in Rosá near Bassano del Grappa (Vicenza). Learn the secrets of the trade from
experts and experienced distillers of high-quality spirits, such as Vittorio
Capovilla and Wolfram Ortner, who will share with you tips for improving your
products and your appraisal skills – in the German, Italian and English
language.
In Capovilla’s water-bath distillery, the
course from the leavings of the grapes, or marcs as they are called, to the
finished product will be analysed with special focus on the separation of heads
and tails of the distillate. In addition, remedies for faulty products will be
proposed in order to achieve a quality that it is in line with international
standards.
The grappa tasting seminars are not
targeted at the participants of the distiller’s course alone, but also open to
sommeliers, caterers, traders and friends of grappa in general. Perfect marcs
products, that were awarded the World-Spirits medals, will be tasted as well as
grappas without added sugar and products of course participants. All the grappas
will be appraised according to the 100-points WOB system.
The main focus will be on the
identification of flaws in the grappas and on working out possible improvements
based on the experience gained from comparison with perfect products. The
overall goal is a change in attitudes and quality- related enhancements of
products by means of state-of-the-art technology combined with the traditional
processes and identity of the product.
At the end of the grappa tasting courses
there will be an evaluation; participants who pass the “test” will be
entitled to work on the jury of the grappa group of the “World-Spirits Award
2005”. This event is supported by VERONELLI EV – it is in personal
interest of Luigi Veronelli himself.

Training for interested
and experienced distillers and sommeliers in Italy (open to participants from
all countries) – from the raw materials, to the processing, distillation and
sensory appraisal of grappas. After this training there will be “Grappa”,
parts 2 and 3 with the focus on spirits distilled from fruit.

Each distiller can offer
four grappas for the tasting training, which will be appraised by blindfolded
participants. Faulty products with and without Casko products can also be handed
in for tasting.
Over the year, distillers
should keep written records of the production of their individual grappas in
order to be able to trace quality back to production in the 2nd part of the
training course.
Training of the senses and membership of the “World-Spirits Award 2005” jury if the participant passes the test. After corresponding training, participants can also qualify as jury members for other categories, such as fruit spirits, whiskey, rum, etc.
