Destilleum Michael Mayer – Specialities from Franconia
In Pflaumheim on the north-easterly edge of the Odenwald forest, Michael Mayer runs his Destilleum distillery with passion and a ‘burning heart’. His motto “Everything is possible, nothing is a must. Normal is for other people!” has accompanied him throughout his life. In 1995, together with a friend, he took over a vineyard in Großostheim near Aschaffenburg in Lower Franconia, but while the vines never really thrived, the berry bushes and sloes grew rampant. So the two of them decided to produce fruit wines: from blackcurrants, raspberries and sloes. Runaway sales at the local Christmas market further encouraged his passion and paved the way for liqueur production. Because Michael Mayer wanted to give his ginger liqueur more aroma, he invested in a distillation system and became a ‘part-time’ distiller – he works full-time for the Großostheim waterworks.
The ‘raw materials’ for the production thrive in his own garden: for example, chilli for the chilli-cherry liqueur, and the family helps pick and process the fruit in his orchard. On a separate plot of land, the creative distiller takes part in the Franconian ‘Mustea’ re-cultivation project, which is responsible for the preservation of old varieties of quince. He has also planted rare varieties, such as sorb, medlar and wild service. The latter requires special, elaborate harvesting, in which four people take four days, standing at least three metres off the ground, to collect 180 kilograms of berries for 4.6 litres of spirit. This also explains why Michael Mayer is well known for his specialities, including elder brandy, quince brandy, medlar brandy, Jerusalem artichoke brandy as well as ginger brandy and spirit. At the World Spirits Award, the Destilled London Dry Gin won a bronze medal.

Hubert Fink, a distiller from Höchst in the Rhine delta at Lake Constance, started to manufacture gin, whisky and fine brandies years ago. The fruit comes from the surrounding meadow orchards, while the Vorarlberg maize for the whisky is cultivated by the family on small fields. What started as a hobby has become a top-notch little enterprise where everybody lends a helping hand. Every bottle is filled and labelled by hand with attention to detail. The products can be sampled and purchased at the ‘Schnapshüsle’ next to the old Rhine Valley house where the family lives.
In 2015, Hubert Fink started experimenting with his own gin. Many hours and many distillates later, Ländle Dry Gin was ready for its market launch. It is set with the best species and highly aromatic juniper berries for an exact time period, then distilled carefully once again and finally refined with the purest spring water from a Vorarlberg mountain spring. It is put to market in a distinctive white clay bottle with a label that looks like old wood.
The whisky is the latest product in the range, for which an old local type of maize was sown, cultivated, harvested, husked and tied together for drying by hand, ground with a little mill and mashed. It was stored for five years in oak barrels specially imported from America and then, just like the gin, filled into striking, non-fading clay bottles. It is scarcely possible to do more by hand.
At the World Spirits Award, there was gold for Ländle Dry Gin, and silver for Ländle Whisky.

The road leads through extensive pineapple plantations and fields of sugar cane up to the distillery at an altitude of 300 m in the South-West of the island. Designed by a renowned architect, the building is elegant and authentic and a fine example of modern construction with its natural materials such as wood, stone and water. The comprehensive concept also incorporates the L’Alchimiste restaurant where up to 80 guests can savour the sophisticated regional cuisine. At the “Sugar Cane Spirit” boutique, various types of rum are on offer (White Rum, Le Coeur de Chauffe (fine brandy), Rum Paille (stored in wooden casks), Rum Arrange (flavoured with fruits and spices) as well as an exclusive clothing range, hand-made products and a small jewellery collection.
The location and climate of the fertile valley promote the growth and quality of the sugarcane. The sugarcane is harvested by hand in the early hours of the morning and processed at the mill within four hours. The fields are not normally burnt, as is usually the case, to make harvesting easier. Even when distilling at the highest modern levels of technology, nothing is wasted: the bagasse – the fibrous remnants of the sugar production process – is burnt to obtain energy. The chimney contains the very latest smoke filters and the ash is used to fertilise the fields.
The company yet again impressed at the World-Spirits Award, with one gold and four silvers.
